After the end of the process, the wine is transferred to large French oak vats for maturation. Aging for 3 months in bottle before going on sale.Garnet color with tiled hints, indicating evolution, but we also know that the color of Sangiovese evolves very quickly. Aroma with complexity from the aging in barrel and bottle, showing however that the wine is still very young and has several years of life ahead of it. Casal Santa Maria Bruma Red

The grapes were harvested by hand, carefully selected in the vineyard and cellar. After lightly crushing the grapes, it was followed by cold maceration in stainless steel vats open for 3 days. Fermentation took 2 weeks with daily pumping over. After the fermentation was over, the mills were closed and kept like this for 2 weeks. The wine aged for 14 months in new and used 225L French oak barrels. Intense aroma with notes of spices, balsamic, floral and cedar. From the Merlot variety, the aromas come with notes of green pepper and chocolate. In the mouth, soft and ripe tannins, filled with the freshness and red fruit typical of Touriga Nacional.
