Manual harvest into small 15 kg perforated boxes, fermentation in a reductive environment, using very gentle crushing and pressing processes under an inert atmosphere in order to preserve all the aromatic potential of the grapes. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entirety of the wine ferments in stainless steel vats and remains there after a small racking on fine lees with periodic “battonage” preparation until the final batch is made. Aging in stainless steel vats with preparation of fine lees - 'batonnâge' until bottling. Great concentration and aromatic purity, with mineral character in balance with discreet notes of exotic fruits and citrus. The grapes were harvested by caste and field, and at the time a rigorous qualitative selection was carried out. After gentle destemming and pressing, the grapes were transported by gravity to small stainless steel vats with temperature control, where they were vinified, caste to caste. The alcoholic fermentation occurred for about 8 days at an average temperature of about 27 ° C. 40% of the wine aged for 6 months in used French oak barrels of 225 liters, with the rest staged in stainless steel vats. Reguengos Trifolium Grande Reserva White
After the selection of the grapes in the vineyards of our associates, the manual harvest is carried out. In the cellar they are unloaded and immediately destemmed and crushed, followed by skin maceration (about 12 hours) in order to extract all the aromatic compounds from the film. Subsequently, the grapes are pressed with oxidation protections from which the tear must is extracted which, after static clarification, starts the fermentation in stainless steel tanks at low temperatures (15/16º) and is then transferred to French oak half barrels.
After fermentation, the wine undergoes a process of “batonnage” in the barrels for a few months, followed by aging until the end of winter, at which time it is removed from the barrels, blended and stabilized, proceeding to its filling in early spring. Wine with a crystalline appearance, defined straw color, fruity aroma with ripe tropical notes, dried fruits and honey, structured and unctuous in a fresh, complex set, with a long and persistent finish.
