Crushing with destemming and cooling of the grapes in the winery in small open wineries (a tank in which the grapes are squeezed, reducing them to liquid). Where the skin maceration begins and later the fermentation, without addition of enzymes and yeasts. The step is done manually with wood masses to increase a greater extraction of the vinous characteristics of the Baga variety.

It comes from the three vineyards located Gouveia and Seia. It was vinified in stainless steel tanks, with soft extractions. It aged for 12 months in used oak barrels of 225 liters. This Lot 3 seeks to be an old Dão with a modern approach. It has a lightly laden color, is little alcoholic, fresh and easy to drink like the wines of the past but has the aromatic beauty, the intensity of fruit in the mouth and the balance provided by the current viticulture and winemaking. Manual harvest. Manual choice of curls. Destemming followed by crushing. Co-fermentation of the grape varieties in stainless steel vats with moderate temperature control and manual pumping over. Stage in stainless steel vat. Ruby color with good intensity. Young, intense aroma reminiscent of ripe red fruits. Dry palate, balanced acidity, good aroma in the mouth. Very soft tannins that give it a silky finish. Contains sulfites.
Quinta Seara D’Ordens Talentvs Altitude White
The grapes are harvested from the oldest vineyards of the Quinta "at altitude" with a mixture of several traditional Douro varieties. Fermentation started in a press with foot treading and ended in used barrels, where it aged for 16 months with battonage on the lees. This tanning is dominated by the yellow tones in the mouth and reveals a sensation of fat, velvety and persistent tannins. It is quite complex, fresh, mineral and full of character. Quinta Seara D’Ordens Talentvs Grande Escolha White
It is an intense, mature wine, specific to the "Terroir" of the Douro, a positive aging in the bottle is predicted for about 10 to 20 years after the bottling. The blend of the traditional castes, Gouveio Real, Viosinho, Rabigato and Arinto, produced in Qta. Seara D'Ordes at an altitude of half a slope, gave rise to this White TalentVs Great Choice. Color citrine wire, aroma with fresh notes and fruity honey and apricot with slight vanilla and smoked. Fruity, complex, balanced flavor and good acidity. Contains Sulfites.
Ontem Red
This wine that comes from the south of the Douro border, granite soils, mixes several white and red varieties. Hand-picked grapes for small boxes, perfectly matured. The bunches were placed whole in a stainless steel tank. The fermentation began within the grapes, and only then the masses were pressed and the fermentation finished. Most of the wine staged in the stainless steel tank, only 20% was staged for 10 months in used barrels. Aroma of forest fruits, silk tannins, lively acidity that surprises and brings a lot of freshness and vibration. Contains Sulfites.

Grapes harvested by hand for small boxes. Destemming followed by crushing and pumping into stainless steel vats. Temperature controlled fermentation, mild reassembly, maceration after one week. Base wine produced from rigorously selected grapes harvested in the ideal maturation stage for production of a sparkling wine. Fermentation at controlled temperature, carried out in French oak barrels. Stage sore fine rubs for 6 months with periodic batonnage. Second fermentation in bottle by the classic method, followed by stage on sludge and intermediate batonnages during 5 years, in the cellars of the Cartuxa Monastery. Contains sulfites.
Herdade das Servas Reserva White
After destemming and crushing, the grapes are pressed in pneumatic press with oxidation protection. Static decanting for 48 hours and alcoholic fermentation in French oak barrels. Clear wine, straw color, aromas of apricot, lime and peach, with notes of toast from the barrel. Fresh, unctuous and structured, with notes of citrus, toasted barrel and persistent finish. Contains Sulfites.
Quinta dos Murças Margem Red
Quinta dos Murças Margem, from the Douro region, staggered in barrels of 500Lts of used French oak for about 9 months. Manual harvesting, sorting table, destemming, crushing, alcoholic fermentation with indigenous yeasts at controlled temperatures (25º to 28ºC) in granite mills with foot step and pressing in an old vertical press. Very intense and exuberant, dominated by ripe black fruits such as blackberry and cassia, balsamic aromas, such as the stew, and soft notes of spices from the used wood stage. Concentrated, it has very mature tannins that, together with its acidity, present but well wrapped, give it a sensation of volume, body and freshness. It has a very long and persistent finish, where the aromas of more mature fruits dominate, allowing to predict a great longevity. Contains Sulfites.

Quinta dos Murças Minas, coming from the Douro region. Manual harvesting, sorting table, destemming, crushing, alcoholic fermentation with indigenous yeasts at controlled temperatures (25º to 28ºC) in granite mills with foot step and pressing in an old vertical press. In concrete vats and used French oak barrels, for about 9 months. Intense color with violet lines. Exuberant and concentrated aroma where the ripe red and black fruits dominate, some floral aromas and balsamic aromas, as the esteva. Palate dominated by freshness and liveliness, it has firm and ripe tannins, with a well-rounded acidity. It finishes long and persistent, standing out the balance between its freshness and maturation. Contains Sulfites.
Aliança Baga Red

Manual harvesting in 20 kg boxes. The grapes were destemmed and crushed, followed by cold skin contact for 18 hours. After pressing and static decanting, alcoholic fermentation took place in a stainless steel vat with controlled temperature (18 ºC) for 17 days. After the fermentation, it was aged on fine sludge for 3 months, and bâtonnage was carried out during the first month and a half. For almost 15 years, Quinta das Marias has produced 100% wine from the Encruzado variety. Encruzado is probably one of the least expressive Portuguese white varieties while young, expressing its full potential over several years in the bottle. Contains sulfites.
