Fermentation takes place in temperature-controlled stainless steel tanks, followed by a stage in the same material, ensuring the preservation of the grapes' unique characteristics. This wine benefits from a careful selection of grape varieties, both Portuguese and international, harvested at the exact ripeness. The proximity of the vineyards to the winery, combined with gentle pressing and fermentation at low temperatures, results in an exceptionally fresh and captivating wine. With a lemon yellow color and a more fruity than floral profile, Tiago Cabaço .com Premium White stands out for its intense aromatic expression and freshness. It is structured and dense, giving it seriousness and volume, and culminates in a vigorous and refreshing finish, marking itself as a reference in Alentejo.

Sharing moments, ideas and experiences with other winemakers or people related to wine is something that Susana Esteban always liked and encouraged. And for this reason he decided to create the Sidecar brand. Every year the producer and winemaker will challenge a friend to make a wine in his cellar in Mora. They will decide how to interpret the fantastic vineyards of the region and as the project's mentor says, they will be driving the bike! For the second edition of the Sidecar invited two friends, the oenologist Filipa Pato and the sommelier William Wouters. An interesting trio, and that above all, makes sense! It decided to join a field blend of traditional varieties of Serra de São Mamede, a cooler and higher altitude zone of the Alentejo, with a Berry of a century-old vineyard of Bairrada, zone influenced by the Atlantic. The wines fermented and stamped both in amphora. Contains Sulfites.

Quinta do Piloto Collection Roxo is a limited edition, elaborated from a unique variety that a few years ago was on the verge of extinction. Moscatel Roxo is a rare variety, known for making one of the best liqueurs in Portugal. Its purple color and small berry distinguish this grape from the Moscatel de Setúbal variety. This special variety gives the wine intense floral notes, making it unique, fresh, with excellent minerality and a long finish. Contains sulfites.

The grapes were harvested by hand, carefully selected in the vineyard and cellar. After lightly crushing the grapes, it was followed by cold maceration in stainless steel vats open for 3 days. Fermentation took 2 weeks with daily pumping over. After the fermentation was over, the mills were closed and kept like this for 2 weeks. The wine aged for 14 months in new and used 225L French oak barrels. Intense aroma with notes of spices, balsamic, floral and cedar. From the Merlot variety, the aromas come with notes of green pepper and chocolate. In the mouth, soft and ripe tannins, filled with the freshness and red fruit typical of Touriga Nacional. It presents an elegant and persistent finish. Contains sulfites.
