Located in the excellent wine region of Bairrada, between Fogueira and Ancas, this farm is home to notable plots, including a plantation from 1931, dedicated to the noble Bical grape variety.
This wine is distinguished by its unique aging: 60% of the batch fermented and matured for 12 months in new and one-year-old French oak barrels, while the remaining 40% benefited from the purity and freshness provided by stainless steel.
It has an extremely pale greenish yellow color, revealing an intense, finely delicate aroma, with touches of white-fleshed fruit and soft toasted notes. The balance is masterful, leading to a long and intense finish, where mineral notes stand out, adding complexity and promising admirable longevity. Its good acidity and refinement are excellent, demonstrating an impressive evolutionary capacity.

Fermentation took place separately, by variety, and for 18 days at 15ºC, followed by a 5-month aging period on the lees, in stainless steel vats. It is the reference wine of the estate, since the first harvest was bottled in 1949, and reflects the unique temperament of the winery. Mouchão wine is born mainly from the best grapes of Alicante Bouschet, while the rest is found in the selection of other varieties such as Habitué Trincadeira, the famous Vinha dos Carapetos, and Aragonês, which is also sometimes invited. This happy combination results in a wine full of personality, with fragrant aroma, fresh and very elegant. It is a wine whose flavor expresses its slow maturation and which strongly reflects its origin and respect for tradition. After harvesting by hand, the grapes follow in small baskets to the cellar, where, after an experienced walk on stone wineries and fermentation, the Mouchão rests in barrels of Portuguese oak, macacaúba and mahogany for at least three years. It grows in all its intensity, character and robustness, but will still have to mature in bottle for another two years. Mouchão wine has a deep, concentrated color, and has a spicy character. Its unique tannin structure enhances a long bottle aging, which can improve significantly on guard for two decades, or even longer. Contains Sulfites.

Total destemming, gentle crushing and thermal shock, followed by a period of cold pre-fermentative maceration in the mill for about 12 to 24 hours. Malolactic fermentation occurred naturally, part of the wine carried out this fermentation in wood. On the nose, very fresh and intense where the notes of wild fruits and black cherries predominate in balance with seductive “nuances of Liquorice”, the aroma being complexed by the notes of wood. Collected by hand, they were trodden on foot for 2 days. At the spontaneous start of fermentation, the grapes were pressed and the must kept in clay pots. Aging for 12 months, it was made in centenary barrels of Portuguese oak and chestnut.
