Grapes grown from some of the most choice land in the surrounding region of La Motte en Provence, consisting primarily of Grenache, Cinsault and Vermentino. Harvesting at sunrise to noon. The grapes which are used to make Whispering Angel are sorted optically. Destemming and slight crushing at 7-8ºC to avoid oxidation. Both the free run juice and pressed juices are vinified in stainless steel. “Batônnage” is twice weekly. Temperature controlled. Contains sulfites.

After selecting the grapes from our associates' vineyards, the grapes that will be the raw material for this wine are manually harvested. Arrivals at the winery are unloaded and immediately de-stemmed and crushed, followed by pre-fermentation maceration for 48 hours and alcoholic fermentation at 23-26ºC using pumping over and delestage, total maceration for 15 days. Aging in new French oak barrels for 18 months. After bottling, the wine ages in bottles for 6 months in our cellar. Wine with a crystalline appearance, opaque ruby color with great aromatic depth, suggesting ripe black fruits, spices and cocoa wrapped in floral notes. Structured, intense and engaging with robust tannins that guarantee a pleasant finish and excellent persistence. Contains sulfites.

Manual harvest, degummed and fermented grapes with thermal control in a small volume stainless steel mill with a moderate mechanical step. Malolactic fermentation in new barrels selected from French oak in an air-conditioned environment, followed by a stage in new barrels for wine-wood integration, 18 months. After a gentle filtration, the wine was bottled and rested for thinning for 12 months in the basement. This wine was made from grapes from the oldest vineyards in the region of Borba, with two of the most emblematic and representative grape varieties of the region, Trincadeira and Alicante Bouschet, settled in shale soils. Color grenade with red nuance. Good aromatic intensity, with emphasis on forest fruits, chocolate, tobacco and toast. Flavor soft, with freshness, texture of strong tannins and oily to black fruits and spices. Silky, prolonged and persistent finish of great elegance. Contains Sulfites.

It is fermented in stainless steel vats at a controlled temperature of 25-27ºC with grapes previously selected and destemmed to 100%. Malolactic fermentation is also carried out in stainless steel. It is aged for 10 months in French oak casks of different ages.
