After harvest, the grapes are collected in the cellar and sent to the cold rooms, where the temperature is controlled up to 10oC for 12 hours. The bunches are then stalked and the grapes broken. Partially fermented in frustoconical stainless steel tanks and French oak vats. After the alcoholic and malolactic fermentation, the stage partially runs for 7 months in French oak barrels of the Seguin Moreau brand (medium – fine grain), until bottling. The bottle stage occurs for at least 12 months. Contains Sulfites.

Prolonged tanning, stage in new French oak barrels, and natural clarification helped by the cutting cold of the Serra da Estrela. It is a red atypical dog as it is much more loaded with color than normal thanks to a year of harvest especially of features. It begins to be discreet and enigmatic, creating strong expectations for lovers. Gradually open, transfiguring in surprisingly and revealing black fruit notes in perfect equilibrium with wood. Casa da Passarella Abanico Reserva Red

Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way - we do not subject this wine to any type of filtration.
