The grapes were harvested by hand and transported to the cellar in 20 kg boxes. They were vinified in mills with treading on foot. Fermentation took place over 6 days in the mill with indigenous yeasts. This followed an 18-month stage in 600 liter kites. Casa da Passarella A Descoberta Red

From the balance of more mature vineyards with more fresh vineyards, is born Casa da Passarella A Descoberta WIne Red. Coming from the Dão region, this wine is based on the traditional varieties Tinta Roriz, Alfrocheiro, Jaen and Touriga Nacional. The winemaking takes place in a winery, where we intend to express the added value of our terroir. In this sense, one of the measures we take are the fermentations that occur with the selected yeast in our vineyards, a tradition of the house that dates back several decades. The stage is made in traditional cement tanks, and a small percentage in used barrels. Contains Sulfites.

Tiago Cabaço Encruzado White

The summer was hot, but Estremoz kept the great thermal amplitudes that are so characteristic and that are fundamental for the plant to achieve slow ripeness so as to obtain grapes with an exemplary balance between alcohol and acidity. If we also add details such as the proximity of the winery to the vineyards, the soft presses, the low fermentation temperatures and the stage in French oak barrels, we have been able to make the most of a caste by itself. Contains Sulfites.
