The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

As grapes are harvested during the fresh period of the dawn for small boxes of 25 kg, according to a judicious selection of melhores na vinha grapes. Fermentation takes place at controlled temperatures for 20 days in small stainless steel tanks, followed by a stage in fine lees with regular stirring. Natural decay and filtering with filtering. The grapes harvested and transported in 22 kg boxes are subjected to rigorous sorting at the entrance to the cellar, before being destemmed, crushed and transferred to stainless steel fermentation vats where they fermented at a controlled temperature for a period of 7 days. 85% aging in stainless steel vats with controlled temperature; 15% in 225L French oak barrels for 6 months. Dark ruby color, with excellent aromatic intensity where floral notes of violet stand out and expressive aromas of wild fruits. In the mouth it starts in a captivating way, evolving into a balanced wine of excellent volume and structure, where we find smooth texture tannins, well integrated with excellent retro nasal sensations of wild fruits.
