Produced using traditional methods, the manual harvest of the selected grapes is followed by cooling to 5ºC, de-stemming, and careful skin maceration. Half of the fermentation takes place in stainless steel and is completed in French oak barrels, where the wine matures for 12 months on the lees, enriching its complexity.
Conde Vimioso Vinha do Convento White has a bright citrus color and an intense aroma of citrus fruits, such as lime and grapefruit. On the palate, it is complex and structured, with a lively acidity that brings freshness and persistence, culminating in a long finish where mineral notes and a soft smoky touch predominate. A white with enormous aging potential, ideal for lovers of wines with character and depth.

100% Touriga Nacional grape variety. A special parcel in our Quinta do Ribeiro Santo. Harvest by hand. Total destemming and decanting at low temperatures for 24h. The first fermentation happened in a stainless steel vat. An in-tank batonnage was followed for 3 months. The second fermentation followed the traditional method of fermentation in bottle, which was held in a cool cellar for 24 months. Light and refined salmon color. Delicate and engaging aromas of apricot, some tangerine and slight toast. Lovely harmony between acidity and structure. Fine bubble offering complexity and freshness. Frei João White made with grapes harvested at the ideal time of maturation were gently pressed in a pneumatic press and the must fermented in stainless steel vats at 16ºC. After alcoholic fermentation, battonage was carried out for 2 months. Citrus yellow color, intense aroma of fresh fruits with white pulp, citrus and flowers, complexed with subtle mineral nuances. The best grapes created at Quinta do Poço do Lobo were harvested manually, and after rigorous selection and de-stemming, they macerated for 10 days in a press with a pneumatic treader. After malolactic fermentation, the wine aged for 12 months in oak barrels. It was bottled after minimal clarification.
Deep ruby color. Complex aroma, with notes of dominant red and black fruits and the barrel where it aged, as well as faint vegetable nuances. Dense, structured and fresh flavor. It has tasty tannins and good gustatory persistence. Contains sulfites.

Manual harvesting. Harvest organized by parcels of vines to ensure harvest at the right time. Transport in small boxes to avoid crushing. Skin maceration. Soft pressing. Spontaneous fermentation in stainless steel tanks with temperature control. Stage on fine lees until mid March. No use of enzymes and collages, when necessary, made with bentonite. Wines stabilized by cold. Light filtration. Bright citrus color. Aroma expressive, floral with notes of tropical fruits and good intensity. But with interesting complexity thanks to the signs of the granite minerality of the region. In the mouth it is dry. A well balanced acidity.
