Manual harvest. Grapes transported in pallets. Maceration in small mills at a temperature between 24 and 26ºC. Use of gravity techniques for grape movement. Aging for 22 months in new French oak casks. This is the first wine from the old vineyard plot (M7) of Quinta dos Muros. The wine that determined that this parcel should be preserved. It is the result of 27 varieties, and a lot of care and passion throughout the process. A red that deserves attention when you have it in the glass. Contains sulfites.

It is a Dão red wine produced from a single plot in Dão in Gouveia, sub-region of Serra da Estrela. An old vineyard on poor granite soils, 55 years old and at an altitude of 600 meters, is planted in the old Dão way with a mixture of white and red grape varieties. The grapes were fermented in a used French oak vat (40% whole bunches) with indigenous yeasts only, followed by post-fermentation maceration for 30 days. Texture Pura red aged for 16 months in a used 3,000L French oak barrel and in used 225L French oak barrels for 16 months. It is a distinctive red wine, with delicate aromas of fresh red fruits, such as cherry and currant, some spices and forest aromas. In the mouth, it has remarkable acidity and minerality, very fine tannins. It is refined and pure with the ever present fruit. Long and complex finish.

This wine expresses the personality of the terroir od Dão wines being elaborated from the Alfrocheiro, Jaen, Tinta Roriz and Touriga Nacional varieties, produced and vinified at Quinta do Soito. The harvest took place in the second week of September. The grapes were harvested manually for small boxes of 18kg according to a careful selection of the best grapes in the vineyard. The grapes were completely destemmed for small stainless steel tanks, where they were macereted 24 yours at low temperature, before beginning the alcoholic fermentation, with yeasts selected at controlled temperature. The alcoholic fermentation lasted about 15 days, with gentle remonstrances of a good extraction of color and aromas. After fermentation, it was transferred to French oak barrels where it remained for 7 months until bottling. Aromas of black fruits, notes of spices and menthol. In the mouth it is dense, with firm tannins, a very balanced acidity and an intense and spicy finish. Contains Sulfites.
