Manual harvest. Grapes transported in pallets. Maceration in small mills at a temperature between 24 and 26ºC. Use of gravity techniques for grape movement. Aging for 22 months in new French oak casks. This is the first wine from the old vineyard plot (M7) of Quinta dos Muros. The wine that determined that this parcel should be preserved. It is the result of 27 varieties, and a lot of care and passion throughout the process. A red that deserves attention when you have it in the glass. Contains sulfites.

Manual harvest. Total destemming. Prolonged maceration in stainless steel tanks. Alcoholic fermentation with indigenous yeasts under controlled temperature for 15 days. Transfer to new and used 225L French oak barrels for 12 months, where malolactic fermentation took place. 12 months of aging in bottle before going to the market. Deep red color. Wild berries and deep complexity with well integrated wood. In the mouth it shows intense concentration, with firm tannins and excellent structure. Its acidity gives freshness and balance to the wine and a very long finish. The power and elegance of Dão in perfect harmony. This wine will age beautifully in the bottle. Perfectly accompanies duck confit, foie gras, oven-roasted veal, roasted kid, sausages. Contains sulfites.
Quinta de São José Touriga Nacional Red

Grapes harvested by hand, for boxes of 25 kg, at their ideal point of maturation; intended to have a vigorous maturation, leading to higher aromatic and polyphenolic concentrations. After gentle crushing and total destemming, the grapes are fermented in stainless steel vats and wine presses, thus allowing the quality constituents present in the films of very ripe grapes to pass smoothly into the wine. After malolactic fermentation, the wine aged in used 300 liter French oak barrels for approximately 12 months. Purple and very deep color, very complex and distinct aromas where the fruity and floral character predominates, characteristic of the grape variety, with notes of spicy notes coming from the wood. In the mouth it shows fruit, complexity, great balance and harmony with high level tannins that give it a long finish. Contains Sulfites.

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.
