The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Following selection on a mat of choice, 30% destemmed and 70% whole bunches were introduced into the vat, allowing the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation. in stainless steel. After aging 50% of used 4-year-old barrels of 400 L and 225 L of French oak, where it remained for 12 months. Wine with a deep ruby-violet color, aromas of rockrose surrounded by notes of forest fruits in a typical Douro setting.
