Joint manual harvest of the 4 varieties, fermentation in stainless steel vats at a temperature below 25ºC. Malolactic fermentation in stainless steel vats, 12 months in used French oak barrels. Smooth filtration before bottling. It presents a deep ruby color, aromatically very intense, menthol, chocolate, red and black fruits. The smooth and very elegant attack with black fruit, eucalyptus flavor and lots of freshness. Persistent. Contains Sulfites.

The grapes, on granite soils and under a certified integrated protection regime, are picked between 3 and 4 am, direct press, without sulphites until the end of fermentation, decantation after 12 hours and fermentation, indigenous part in 50% in old barrels, and controlled 50% in stainless steel. 12 months aging on primary lees without battonage. The two varieties together ferment three days in marble mills with foot steps. Transfer to stainless steel tank where the alcoholic fermentation ends. Follows 12 days of post-fermentation maceration.

The aging takes place over a period of 6 months, thus preserving all the freshness and varietal character of this fantastic grape variety. Harvest by Hand. Grapes from a single vineyard of Encruzado grape variety, from the Ribeiro Santo Estate. Total destemming and pressing. Selection of the grape must and cooling at low temperatures for 24h. Fermentation only in stainless steel vats, with temperatures rounding the 15ºC for 20 days. 50% of the wine fermented in new French oak barrels for 4 months. Clear color, with green shades, this wine shows the authenticity of the grape variety Encruzado in a fresh and elegant way. Pear and white flower notes on the nose. The Quinta da Pellada Alto was aged for 28 months in French oak use room. This is one of a trio of wines, this issue that owner Álvaro Castro has issued with old style labels as an exercise in terroir. This is a field mix of the highest plot (although in less than 10 meters - the differences are more in the soil); The House is the "most exposed" corner, with a different kind of soil; and the "49" is the middle pack. Its elegance makes it look lighter, but it is much more concentrated than the first taste would suggest. It has excellent fineness of the middle palate, full of flavor, well rolled and beautifully constructed.

It is a wine of extraordinary rarity, with incredible precision and definition, an expectation of longevity of 25 or more years, and immediately established itself as a cult white wine.
