This wine comes from the exclusive Quinta dos Pasmados region, in Azeitão. In 1998, the landmark decision was made to replace the Chardonnay grape variety with Viosinho, with the origin of Arinto and Esgana also being changed from clay-limestone soils to sandy soils. In 2005, with the aim of improving the complexity of the wine, the Viognier variety, cultivated in our vineyards for over 40 years, was added. Around 1999, winemaker Domingos Soares Franco came across several bottles of Pasmados White from 1963 in the cellars. Displaying a yellowish tone that testified to its natural aging, the aroma revealed evolution, remaining fine, velvety and subtly fruity. On the palate, it stands out for its pleasantness and surprisingly well structured, presenting exceptional quality and notable acidity. Inspired by this discovery, Domingos Soares Franco then decided to test the production of a Pasmados with aging potential, using the 1963 as a reference. The best vintages are stored in the cellar, small quantities of bottles being sold again years later under the almost forgotten name of Garrafeira. Also rescuing Garrafeira's classification, Pasmados Garrafeira was born. Contains sulfites.

Citrus color, bright, greenish straw. Nose with ripe fruit, light passion fruit and Viognier mango. Notes of lime and wafer maria with light smoked and ripe pineapple. In the test, it has a fresh and mineral attack, full of spicy texture, but always with the same varietal sensation that it feels in the nose, conveying elegance, balance and fulfillment during all the test, end tostado and floral. Casa da Passarella O Enólogo – Vinhas Velhas Red

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.

Total destemming, cold pre-fermentation maceration and alcoholic fermentation at 14 ° C. Final fermentation stage in new French oak barrels for 2 months. Citrus green color, complex aroma, with discrete white pulp fruits and notes of toasted nuts such as almond, hazelnut and apricot. Fruity flavor, balanced, with excellent volume in the mouth and with buttery notes. Contains sulfites.
