The grapes of this wine come from a plot with the two varieties mixed, trying to replicate the type of planting of a century-old vineyard. Also for this purpose, and through interventions in the vineyard, production was limited to two or three bunches per vine. The grapes of the two grape varieties, harvested at the same time, and without destemming, leavened for about a week in an open mill. During this time, wood masses were rerun several times a day until the wine reached the correct intensity. Finally, the wine finished fermentation in used barrels of Burgundy (French oak) where it staged. It then passed to a small barrel of wood where it remained until bottling without any gluing or filtering. Contains Sulfites.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to a pneumatic press. After clarifying the must, alcoholic fermentation began in stainless steel tanks at low temperatures of around 12ºC, in order to preserve all the varietal character of the variety. Alcoholic fermentation took place for approximately 20 days, where the different components then staged for 8 months. It is a light salmon colored wine. In the aroma, it presents notes of very fresh red fruit, such as strawberry, fresh cherry, light currant and floral. In the mouth it is slightly structured with a lot of freshness to balance the entire tasting.

Aging for 8 months in new French oak barrels with battonage. A new wine from Cepas Velhas. Aromatically it is a very fresh wine, with citrus fruit, in harmony with light floral nuances and strong mineral notes typical of the Terroir. Desengace and fermented grapes in a wine press with manual treading. Malolactic fermentation and a prolonged period of 20 months in new barrels (50%) and French oak barrels. Naturally stabilized wine during barrel aging. 3650 bottles were produced. Delicate aromas of ripe red fruit and light floral notes. Mediterranean bush, cedar, wood, mocha, spice and moss add aromatic complexity. In the mouth it shows to be an elegant wine, full of minerality and freshness, reflecting well the calcareous soils from which it comes. It is simultaneously a deep, structured and complex wine, with a long finish, the result of the prolonged aging in barrels to which it was submitted. Contains sulfites.

Made with grapes harvested from the old vines on the Ribeiro Santo property and on another plot, in São João de Lourosa, where the Dão runs, which calls the origin of this blend, made from the Encruzado variety. The must fermented under lees, then in 300L barrels and aged there, with battonage, for 6 months. After bottling, the wine was kept in the cellar for another 6 months. Clear and citrine color. Delicate aroma with notes of white fruit, aromatic herbs and a mineral profile. In the mouth tasting it shows complexity and freshness, with a refreshing minerality and citric acidity. Contain sulfites.
