Quinta das Bágeiras Pai Abel Red
75,00 €
The grapes of this wine come from a plot with the two varieties mixed, trying to replicate the type of planting of a century-old vineyard. Also for this purpose, and through interventions in the vineyard, production was limited to two or three bunches per vine. The grapes of the two grape varieties, harvested at the same time, and without destemming, leavened for about a week in an open mill. During this time, wood masses were rerun several times a day until the wine reached the correct intensity. Finally, the wine finished fermentation in used barrels of Burgundy (French oak) where it staged. It then passed to a small barrel of wood where it remained until bottling without any gluing or filtering. Contains Sulfites.

Petite Syrah grapes harvested at dawn and transported carefully to the cellar, where they were partially destemmed. Subsequently, for 48 hours, a pre-fermentative maceration at low temperatures was carried out in a reducing environment. The fermentation cycle took place normally, at a controlled temperature in 20-ton vats. After the alcoholic fermentation was completed, a post-fermentative low temperature maceration was carried out for 96 hours. Malolactic fermentation took place naturally in wood, where the wine aged for a period of 8 months, and was then bottled. In the tasting it shows intense floral aromas of rosemary and rock rose, well integrated with a fragrant aroma of black plums and peppers.
