Chão dos Eremitas Os Paulistas Red

The Paulistas, name given to the Hermits of the order of São Paulo who made their wine in this place for so long, that this date was lost in the memories. However, the Papal Bull of 1397 exempted “Os Paulistas” from taxes on their vineyards, demonstrating the importance of this location. The place is special and receives two streams that bring water from Serra D’Ossa and keep the water nearby and the soil fresh, with no need for watering for the good development of the grapes. The grapes, also from another time, planted in 1970, Tinta Carvalha, Moreto, Castelão, Alfrocheiro and Trincadeira, demonstrate that there was another Alentejo, without irrigation and without improving varieties. An Alentejo worth recovering, this is our tribute to the Paulistas. Nocturnal manual harvest, selected on a sorting table, 30% whole bunch and 70% destemmed, falling by gravity into the vat. Spontaneous fermentation and maceration between 25 and 40 days, followed by an 18-month aging in French oak barrels with more than three years. Ruby color with some violet touches, medium concentration. On the nose, lots of red forest fruit, some undergrowth. Fresh attack, good fruit with hints of pomegranate. Very thin, long and with structure.

The harvested grapes were selected from the vineyard and then introduced into the vats with 40% destemmed and 60% whole bunches, allowing the extraction of color and aroma compounds more smoothly during 2 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation in stainless steel. After aging 50% in used 3-year barrels of 400 L and 225L of French oak, and 50% in second-year barrels; where he stayed for 9 months. Filling and aging for 20 months in bottle. Wine with a ruby-garnet color, aromas of rockrose, red fruits with evolution to balsamic notes, light aroma of cedar, highlighting a spicy character. In the mouth velvety, long, fresh and careful. Classic cut wine. Contains sulfites.

Intense ruby red color, concentrated, beautiful halo of more open hue, limpid appearance. On the nose it presents aromas of ripe red and black fruits, then adding a fresh and fragrant floral, well-integrated notes of barrel aging, fresh balsamic, cigar box and a light touch of mint from the stream at the end. Mouth full of strength, vigorous, with acidity at the balance point, slightly drying the palate, revealing structure and volume, present tannin, without imposing itself on the fresh and juicy fruit, with amplitude, showing once again the good integration of the notes coming from the barrel aging and long aftertaste. Nero d'Avola is one of the most important castes in Italy. Originally from southern Sicily, it arrived at Monte da Ravasqueira by the hand of its founder José Manuel de Mello in the incessant search of the indifferent exploration of the terroir and the production of atypical and challenging wines. In the harvest of 2012 this wish was interpreted, giving rise to a unique and rare wine in Portugal that maintains the original characteristics but which expresses well the unique freshness and mineral character of our grapes.
100% Nero d'Avola, Ravasqueira Nero d'Avola 2012 wine proved to be precocious and fast maturing. Acidity, aromatic intensity and density of tannins are the adjectives that best characterize this year's grapes. Manually harvested and subject to a lowering of the temperature before vinification.
Incarnate color alive and intense. Nose complex, closed in need of decanting. Slight notes of eucalyptus, varied peppers, floral and with intense notes of cherry. The test is full and elegant. High density of fine tannins in balance with mineral acidity, fleshy and light vegetable. Contains Sulfites.
Quinta do Crasto Touriga Nacional Red

Quinta do Crasto Touriga Nacional 2016 aged in French oak barrels where it remained for 18 months. The grapes, from the best plots of Touriga Nacional at Quinta do Crasto, were transported in boxes of 22 kg capacity and subjected to rigorous sorting at the entrance to the cellar. After a complete destemming and a slight crushing, the must was transferred to fermentation vats in stainless steel with controlled temperature. At the end of the alcoholic fermentation, a soft pressing was carried out. It is a rich violet colored wine, with elegant violet notes on the nose, in perfect harmony with soft notes of fresh spice and wild Douro fruits. Starts the mouth tasting in a harmonious way, evolving into a wine with excellent volume and fine texture tannins very well matched with violet aromas. An engaging wine that mirrors the entire identity of Touriga Nacional and ends with excellent freshness and persistence. Contains Sulfites.
