The grapes that make up this wine were destemmed and fermented in an open press with manual treading. Malolactic fermentation and prolonged aging of 20 months in new (70%) and used barrels, both in French oak. Naturally stabilized wine during prolonged aging in barrels. 1400 bottles were produced. Complex and well-defined aroma, with notes of ripe cherry, blueberry and light floral traces. Cedarwood, forest floor, tobacco box and spice add aromatic complexity. In the mouth it proves to be an elegant wine, full of minerality and freshness, reflecting well the limestone soils from which it comes. It is simultaneously a deep, structured and complex wine, with a long and persistent finish.

Manual harvest. Manual choice of curls. Destemming without crushing the berries. The two varieties fermented together in used 500L French oak barrels where they were subjected to gentle pigeages. After an aging period of 19 months in used 500L barrels, we carry out a light gluing and subsequent bottling. The wine rested for 1 year before being marketed. Open grenat color, fragrant, exuberant aroma, a combination of aromas of red fruits and spices. Smooth attack, very silky tannins, very light with excellent freshness. Elegant. It has a remarkable balance. It ends with its aromatic side. Contains sulfites.

The grapes were harvested manually and transported to the cellar where they were destemmed. Alcoholic fermentation took place in stainless steel tanks at 26–27°C. After finishing, we kept the wine in post-fermentation maceration for 5 days. The malolactic fermentation occurred naturally in a stainless steel tank and then it was transferred to barrels where it remained for 18 months. Aged for 18 months in French oak barrels and 36 months in bottle. Powerful nose with notes of black fruit wrapped in spices and tobacco. In the mouth, the intensity of the freshness of Cabernet Sauvignon stands out, followed by the creamy texture of Alicante Bouschet, which leads us to an elegant and persistent finish. The grapes were vinified in 5 and 10 ton stainless steel vats with controlled temperature and programmed pumping over. After malolactic fermentation, all wines were transferred to 225 L French oak barrels where they remain for about 16 months. 45% new barrels and 55% used barrels. Very concentrated, with balsamic notes of oak wood, very ripe red fruits and violet. Very balanced flavor, high concentration of red fruit, with ripe and round tannins and a long and fresh finish. Contains sulfites.
