After selecting the grapes from our associates' vineyards, the grapes that will be the raw material for this wine are manually harvested. Arrivals at the winery are unloaded and immediately de-stemmed and crushed, followed by pre-fermentation maceration for 48 hours and alcoholic fermentation at 23-26ºC using pumping over and delestage, total maceration for 15 days. Aging in new French oak barrels for 18 months. After bottling, the wine ages in bottles for 6 months in our cellar. Wine with a crystalline appearance, opaque ruby color with great aromatic depth, suggesting ripe black fruits, spices and cocoa wrapped in floral notes. Structured, intense and engaging with robust tannins that guarantee a pleasant finish and excellent persistence. Contains sulfites.
José de Sousa Magnum Red

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

Nero d'Avola is one of the most important castes in Italy. Originally from southern Sicily, it arrived at Monte da Ravasqueira by the hand of its founder José Manuel de Mello in the incessant search of the indifferent exploration of the terroir and the production of atypical and challenging wines. In the harvest of 2012 this wish was interpreted, giving rise to a unique and rare wine in Portugal that maintains the original characteristics but which expresses well the unique freshness and mineral character of our grapes.
100% Nero d'Avola, Ravasqueira Nero d'Avola 2012 wine proved to be precocious and fast maturing. Acidity, aromatic intensity and density of tannins are the adjectives that best characterize this year's grapes. Manually harvested and subject to a lowering of the temperature before vinification.
Incarnate color alive and intense. Nose complex, closed in need of decanting. Slight notes of eucalyptus, varied peppers, floral and with intense notes of cherry. The test is full and elegant. High density of fine tannins in balance with mineral acidity, fleshy and light vegetable. Contains Sulfites.

Quintas de Borba Grand Reserve Red

This wine comes from selected grapes in the oldest vineyards in the Borba region. After rigorous control of the maturation evolution of the grapes in the vineyard, upon arrival at the winery the grapes were de-stemmed and gently crushed, followed by the alcoholic fermentation process in a stainless steel press, with mechanical treading, ending in maceration for 10 days, under temperature control at 22-25ºC. Malolactic fermentation took place in a small stainless steel tank. Aging for 12 months in new French, American and brown oak barrels prior to bottling and a final aging in the cellar for 12 months in bottle. Garnet color. Aroma of black fruit jam. Full flavor with soft, fruity and toasted tannins, with final freshness and sweet cocoa.
