Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

Chryseia 2021 was produced from a rigorous selection of grapes from Quinta de Roriz and Quinta da Perdiz, properties of Prats & Symington. As in all previous editions of Chryseia, there was also the usual contribution from Roriz's neighboring vineyard, Quinta da Vila Velha, privately owned by Rupert Symington. It symbolizes the union of the noble Portuguese wine heritage with the no less rich Bordeaux oenological tradition.
Quinta dos Carvalhais Mélange à Trois Red

The grapes were harvested by caste and field, and at the time a rigorous qualitative selection was carried out. This wine expresses the personality of the terroir od Dão wines being elaborated from the Alfrocheiro, Jaen, Tinta Roriz and Touriga Nacional varieties, produced and vinified at Quinta do Soito. Lightly pressed grapes with whole bunch. The resulting must was fermented in used barrels, followed by regular batonnage until the date of bottling. Tartaric and protein stabilization achieved naturally during an extended 10-month aging in a barrel. 1440 bottles were produced. Aromas of red, floral fruit. Suggestions of vanilla, brioche and spice add aromatic complexity. In the mouth it shows to be an elegant wine, full of minerality and freshness, reflecting well the calcareous soils from which it comes. It is simultaneously a deep, structured and complex wine.
