Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different batches aged in 225L oak barrels for 14 months. After bottling, the wine aged for another 6 months in the bottle. It is a ruby colored wine of medium intensity. In the aroma, it presents notes of fresh fruit with a predominance of red and black fruit. In the background, it is possible to feel the complexity of the spices from the barrel stage. In the mouth, it is fresh, with polished tannins that give structure and volume to the final set.

Planted in clayey-schist and sandy loam soils, with low yield potential, the Vicentino grape varieties boast their best attributes. The low productivity imposed by the land will act as a stimulus to the quality of the grapes that are formed, promoting an ideal concentration of organic acids, sugars and phenolic compounds. Achieving this balance between quantity and quality, together with a mild climate, makes it possible to obtain a raw material of excellence. Fermentation in stainless steel vats at a controlled temperature of 14ºC. Aging on fermentation lees for 6 months, followed by 3 months of rest in bottle before being marketed. The wine that most reflects the perfect symbiosis between the Atlantic, the soils and the vineyards is Vicentino Sauvignon Blanc. In this white, the proximity to the sea is reflected in a more vegetal profile, associated with the typical characteristics of the variety, showing light notes of tropical fruits balanced in the mouth by a fresh acidity. These sensations persist on the palate, in a smooth and enveloping taste. Contains sulfites.

This wine expresses the desire to make a Touriga Nacional from old vines. In a region where the old vineyard consists of a wide range of grape varieties mixed in the same plot. In 2009, 3,500 kg of Touriga Nacional were harvested from a single 80-year-old vineyard, which implied making a choice of Touriga Nacional grape varieties in the large set of grape varieties of that parcel. Vinification was done in a cement vat with pre- and post-fermentative maceration. Aging for 1 year in 225 liter French oak barrels. Opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant. Long aftertaste. Contains sulfites.

Grapes from previously selected vineyards follow strict ripeness control before the harvest decision. In the cellar, the process of total destemming and light pre-fermentative maceration follows, clarification for 18 to 24 hours. Then alcoholic fermentation starts at 15ºC, followed by a light and partial aging in French oak barrels with “batônnage sur lies”. The grape varieties were accompanied separately during the stage, the final blend being made only with the best wines. Crystalline appearance, greenish to golden color. Intense, complex aroma, elegant in character, suggesting notes of tropical fruits, pineapple and light vanilla, with a subtle presence of French oak. Structured, generous, harmonious and balanced in the mouth. Soft palate, refreshing due to acidity and persistent citrus and tropical fruits in the long finish. Contains sulfites.
