Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

The grapes are destemmed and carefully selected manually on the table of choice. After crushing, they are trodden in marble presses with the traditional treading on foot. Fermentation ends in stainless steel vats at controlled temperature. Aging 12 months in new French oak half barrels. Deep violet and dense color. Intense and deep aroma, dominated by spices and very ripe black fruits, where notes of dark chocolate are also present. In the mouth, voluminous, with a well-involved acidity, which together with its retronasal aroma, gives it great elegance and persistence. Contains sulfites.

It is ready to be consumed, an immediate pleasure that can last for 5 years if stored well with temperatures up to 15ºC. Contains Sulfites.

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.

Fermentation in stainless steel vats, with maceration at a controlled temperature of 26-28ºC. Aging in new French oak casks for 14 months. A beautiful wine with aromas of ripe fruit such as blackberry and black cherry, as well as a freshness given by wild aromas. On the palate it shows good acidity, with well present but ripe tannins, polished and well harmonized with the toast provided by the wooden stage. Ends long and with a slight and bitter seductive. Contains Sulfites.
