José de Sousa Magnum Red

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

The grapes were crushed gently with total destemming, which was followed by the alcoholic fermentation process in a stainless steel mill, with moderate mechanical treading, ending in maceration for 10 days, under temperature control at 24ºC. The wine aged for 12 months in French and American oak barrels. After light filtration, bottling took place and a final stage in a 30-month cellar in the bottle. Deep garnet color, good aromatic intensity to very ripe black fruits, cocoa and toasted nuts. A soft flavor with silky tannins of raisin fruit and wild berry, full-bodied but with a long-lasting freshness. Contains sulfites.

The harvest is collected in small 10 kg boxes. These wines are obtained after fermentation at a controlled temperature, in order to preserve all their aromatic elegance, in large wooden barrels and stainless steel tanks, for 20 days. The wine is produced by malolactic fermentation in French oak barrels and has a subsequent maturation period of 18 months to enhance its structure and complexity. Quinta de Lemos Dona Santana is a wine made from four grape varieties from the Dão region, with notes of jelly and cocoa. Ripe, creamy and elegant dark fruits Sweet and attractive finish. .
