Grown in pebble soils, the grapes are meticulously harvested by hand from the chosen plots. After harvesting, they are cooled to 5ºC, de-stemmed and gently crushed. Each variety is vinified and matured separately, ensuring the purity and complexity of this blend.

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden on foot and destemmed by hand on a table called "table of ripanço". Afterwards, a small part of the must, the films and the stench are fermented in the clay pots, and another in the wine press. The remainder of the brand is fermented in stainless steel vats. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months in French and American oak casks. Red color loaded with scented dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, tannins present but soft. Long end of test. Sharing moments, ideas and experiences with other winemakers or people related to wine is something that Susana Esteban always liked and encouraged. And for this reason he decided to create the Sidecar brand. Every year the producer and winemaker will challenge a friend to make a wine in his cellar in Mora. They will decide how to interpret the fantastic vineyards of the region and as the project's mentor says, they will be driving the bike! For the second edition of the Sidecar invited two friends, the oenologist Filipa Pato and the sommelier William Wouters. An interesting trio, and that above all, makes sense! It decided to join a field blend of traditional varieties of Serra de São Mamede, a cooler and higher altitude zone of the Alentejo, with a Berry of a century-old vineyard of Bairrada, zone influenced by the Atlantic. The wines fermented and stamped both in amphora.
