Nose, very fresh and intense with notes of wild black fruits and black cherries in balance with seductive nuances of “Liquorice”, the aroma being complexed by notes of wood. At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.

Manual harvest in 20kg boxes, fermentation in stainless steel vats at a controlled temperature between 14º-16ºC. Duration 27 days. Stage for 6 months in stainless steel vats and 2 months in bottle. Pale lemon color, young nose, fresh with a predominance of citrus fruits and some tropical notes. Very pronounced acidity with a dry, long and persistent finish .

Manual harvest, during the month of September. At the entrance to the winery, the grapes were rigorously selected. This was followed by fermentation in stainless steel vats at low temperatures (15-16º), in order to enhance the fermentative aromas of the varieties. Combined in 300 liter French and Hungarian oak barrels for 6 months. This Reserva displays a very elegant profile. On the nose, citrus aromas stand out, but also notes of apricot and a floral touch. On the palate it has vibrant acidity and structure, with a long, mineral finish. Contains sulfites.
