It aged for 15 months in new 300 L French oak barrels. Intense and very fresh aroma, showing well the cool summer nights at altitude in the Douro Superior, marked by violets, black and red fruits very characteristic of the grapes that gave rise to it, in balance with very subtle notes of French barrel. In the mouth, freshness, acidity and live tannins denote the soil and climate and provide longevity, then all the notes of aroma are felt in an elegant and long set.

Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way - we do not subject this wine to any type of filtration. Soalheiro Granit White

The Soalheiro Granit reveals the more mineral side of the Alvarinho variety. It is a Alvarinho that leaves a specific selection of vineyards planted above 200 meters of altitude, revealing the minerality that relates the soil of granite origin of the terroir of Monção and Melgaço and the Alvarinho variety, improved with the batonage and the stage in the fine lees . The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Granit come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose. The bottling takes place after the batonage and the stage in the fine lees. Citrine yellow color, aroma with the profile restrained and elegant with mineral notes and dry finish.

The harvest is done by hand and the grapes are transported to the cellar in small boxes. This is followed by pressing the whole grape in a press and settling in a cold stainless steel tank. Then the completely clean wort is transferred to other stainless steel tanks where it is fermented at a controlled temperature of around 15ºC. The alcoholic fermentation of the wine is kept in vats only with fine sludge for another 5 months with batonnage. Before bottling it is transferred and has natural stabilization and light filtration in order to maintain all its aromatic potential and structure. Contains sulfites.
