At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.
Quinta de Lemos Touriga Nacional 2012 Red

Touriga Nacional, a Portuguese indigenous variety from the Dão region. This variety with a high oenological potential of a resounding bearing falls with an integrated protection program and the application of herbicides is prohibited. Harvesting is hand made, caste by caste, when the ideal maturation point is reached, usually between the second fortnight of September and the first fortnight of October. The harvest is collected in small boxes of 10 kg. These wines are obtained after fermentation at a controlled temperature in order to preserve all their aromatic elegance in large wooden barrels and stainless steel tanks for 20 days. The wine is produced by malolactic fermentation in French oak barrels and has a subsequent maturation period of 18 months to enhance its structure and complexity. Quinta de Lemos Touriga Nacional is dark concentrated, thin and elegant, balsamic, prunes and ripe blackberries, citrus. Fine wood temper the whole. Dense texture of fine tannins. Contains Sulfites.
Pacheca Superior White

After careful selection for their best condition, the grapes were harvested into 25 kg trunks and sent to the vinification center where they were lightly pressed in a pneumatic press. The resulting must was sent to stainless steel vats and cooled, where it remained for 24 hours to decant. At the end of this period, it was filtered and transferred to another stainless steel vat where it was inoculated with selected yeasts, having fermented at a controlled temperature of 14-16ºC. After alcoholic fermentation, it aged in 2nd year French oak barrels with weekly bâtonnage for 6 months. Pacheca Superior White has a complex aroma, some tropical fruit notes such as pineapple and passion fruit and toasted notes from the barrel. In the mouth it is marked by exotic fruit wrapped in toasted wood notes that give it a rich body and a long and persistent finish. Contains sulfites.
