Natural fermentation with indigenous yeasts in cement vats without temperature control, followed by malolactic fermentation in barrels. At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

Manual harvest in 20kg boxes. The bunches are selected on a sorting table and then the grapes are crushed and transported to the fermentation vats without the help of pumps. Here, they are left to macerate between 3 to 6 hours at low temperature. The resulting sangria spontaneously ferments at 12ºC in order to maintain its full aromatic potential.
Features a crystalline blush pink color. Intense nose with notes of ripe strawberries, with a touch of cream. Attack with round, smooth texture. Finishing with good freshness. Contains sulfites.
