Vineyards installed on red soils derived from brown or crystalline limestone, with patches of schist, benefiting from a Mediterranean climate with high temperature ranges and hot, dry summers. After the necessary early interventions during the growing season, the grapes were harvested manually and transported to the winery in small boxes. Once malolactic fermentation was completed, the wine was partially aged for 12 months in 2nd and 3rd year French and American oak barrels. After bottling, it rested in bottles for 2 months in our cellar. To preserve all its qualities, this wine has not been stabilized and can naturally deposit. Clear wine, violet red, aromas of cherry, blackberry, spices and floral notes. Structured, balanced and voluminous, with a full body and persistent finish. Contains sulfites.

Manual harvesting for small perforated boxes. Destemming and crushing, cold maceration, alcoholic fermentation for two weeks, malolactic fermentation in French oak barrels. Aged for 12 months in 300 L barrels of French oak. Intense and fresh aroma, notes of violets, bergamot and black fruits in balance with French barrel notes from malolactic fermentation and aging for 12 months. Some of its Baga grapes come from old vines, but in years when there is no red wine cellar and there is a red reserve, all the grapes from the old vines are intended for this wine. These grapes are fermented between 5 to 8 days in open winery and without destemming (the berries are not removed from the bunch). Then a reassembly is done with wood masses several times a day until they reach the correct intensity. Then the wine finishes the fermentation in old wooden barrels. While it rests it is cleaned and it stays in the same barrels about 18 months. It is bottled without any glue or filtration. All these processes are done manually. Contains Sulfites.
