The grapes were harvested manually and transported in small boxes to the cellar where they were stored in a cold chamber at 3°C for 24 hours. They were then selected and gently pressed. The must was cold decanted (10°C) and then fermented in French oak barrels. After alcoholic fermentation, the wine aged for 6 months in barrels with battonage and sur lie. Crystalline wine, with greenish yellow tones, fruity aroma with notes of yellow plum and pineapple. In the mouth, it has an excellent volume, dense but with good refreshing acidity.

When the grapes reach the ideal stage of maturation, they are harvested and transported to the winery, where the technological process begins with total destemming and slight crushing. The grapes are then fermented separately in stainless steel vats and French oak vats, at a temperature of 27 ° C, followed by 15 day maceration. Quinta da Pellada Dente D'Ouro spent 16 months in used French oak barrels. The wine is composed of several native grape varieties, mainly Jaen and Baga. The grapes come from a very old vineyard with vineyards, which are between 80 and 100 years old. It is very important for Alvaro Castro to show that it is indeed possible to revive the tradition of blends of native fields and vines in his Dao area. The wine shines with ruby red with violet nuances. It shows a beautiful fresh and mineral scent, thin and incredibly complex, with notes of blackberry and plum. On the palate, a medium concentration, blueberry aromas, notes of spices and some earthy notes, plus unlikely silky tannins, absolutely attractive. A light red wine, elegant and very fresh, juicy, with mineral notes and berries, at a long, deep and very thin finish. Wonderfully multi-layered and with elegant precision. Simply sublime!
