Manual harvest with subsequent selection. After destemming, the grapes go to marble presses where traditional foot treading is carried out with subsequent alcoholic fermentation at low temperature. Half of the batch aged for 12 months in French oak barrels and the other half aged in cement deposits. Red color, opaque with violet hints. Very aromatic wine, with notes of black plum, mint and cocoa. In the mouth it is elegant, with good structure and firm tannins. Long and persistent finish.

The grapes, previously destemmed, underwent a pre-fermentative maceration at low temperatures for 12 hours. The alcoholic fermentation was done in mills, with temperature control, not exceeding 27ºC, during 10 days, with the use of robot to step. The wine aged for 18 months in second and third use French oak barrels. Deep color of violet tonally, with good concentration in the nose. Rich in aroma, with notes of ripe black fruit and spices combined with floral notes. In the mouth it looks elegant and fresh, with an excellent tannins-acidity combination, and a long, smooth and elegant finish.

MAIAS wine comes from the Quinta das Maias property, in organic farming, which is located at about 600 meters of altitude in the foothills of Serra da Estrela. The name derives from the yellow broom that covers the slopes of the mountain and here they are called «Mayas» because they bloom in the month of May.
The wines are characterized by the freshness of grapes from vines planted at altitude and by sandy granite-based soils.
This woodless white wine is dominated by the Malvasia Fina and Encruzado grape varieties, which contributes to the floral and plum notes with fresh and elegant aromas.

Alvarinho grapes are harvested manually from a selection of grapes from our vineyards in Quinta de Soalheiro, produced according to the concepts of organic farming where we protect the wine ecosystem, promoting biodiversity and environmental sustainability. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation and stage in (new and used barrels), remaining in the fine lees with periodic batonnage until the end of June. Intense yellow color, elegant and persistent aroma with nuances of barrel, maintaining the freshness and the fruit of the Alvarinho variety. The flavor is full bodied and complex. Contains Sulfites.

The grapes are picked by hand prior to destemming and there is an automated selection process. These are gently crushed before being transferred to the fermentation in the vats where they are inoculated with a specially selected yeast culture and fermented at 25 ° C. During fermentation, the wines are gently macerated with the ability to mature in the bottle. Post Scriptum DOC features a deep ruby color, appealing ripe plum scents. Bulky and well structured body. The grapes are chilled and then pressed in a pneumatic press. Cold decanting, followed by fermentation in temperature-controlled stainless steel barrels and vats with regular buffering up to one month before bottling. It is a rich and concentrated white wine, but very precisely in citrus fruit and notorious minerality. Contains Sulfites.
