Grapes grown from Chateau D’Esclans vineyard, consisting primarily of Grenache and Vermentino. Harvesting at sunrise to noon. Grapes are sorted by optical eye electronically and manually three times. Destemming and slight crushing at 7-8ºC to avoid oxidation. Free run juice and first slight pressing. No maceration. Both free run juice and pressed juice partially vinified in demi-muids (600L Barrels) and stainless steel, both temperature controlled. Contains sulfites.

The grapes are selected and harvested by hand. The must undergoes maceration for 12 to 14 days, followed by malolactic fermentation. The wine is then aged in French oak barrels for a period of 6 to 10 months and further refined in the bottle. Very slow pressing to respect the fruit. The juices from the last pressing are not retained. No artificial yeasts or enzymes are used. Part of the wine ages in 500 liter oak barrels and the other part in stainless steel vats for 6 to 8 months. Throughout the aging process, decisions are made only after careful evaluation of the tasting. The data obtained are completed through technical analysis. As with all other Joseph Drouhin wines, absolute priority is given to the true expression of the terroir and character of the vintage. The color is clear and bright. It presents mineral notes with white flower notes. Precise on the palate and prolonged aftertaste. Shows incredible purity. Contains sulfites.

Average production of 17 months in 50% new, oak and year. without nose aromas of very ripe black fruit, licorice and Chinese ink, with more mineral notes and the quantities provided by the barrel, generating a good harmony. in the mouth it is potent, structured and with soft and round tannins, providing a considerable elegance. the enormous power of the foot when it began its stay in the oak, was softening with the last months of age and the child and from a wine with a perfectly integrated wood. ps 2016 needs a few years and is for its best qualities. Ideally, it should be done at least a year to begin to be enjoyed, however from your third stage will further develop the complexity and range of hues. Contains Sulfites.

Manual harvest at the optimal point of maturation, with accurate selection of bunches. Fermentation takes place in stainless steel tanks with controlled temperature. After the end of the process, the wine is transferred to large French oak vats for maturation. Aging for 3 months in bottle before going on sale.Garnet color with tiled hints, indicating evolution, but we also know that the color of Sangiovese evolves very quickly. Aroma with complexity from the aging in barrel and bottle, showing however that the wine is still very young and has several years of life ahead of it. Ripe cherry, autumn forest, some leather, dried thyme. Solid and confident in the mouth, with good body, very accurate acidity, lively tannins, but not harsh.
