Founded in 1920 by the brothers José, Manuel and Albano Costa, Caves São João is a family business that was originally dedicated to the marketing of fine Douro wines and liqueurs. Today, the oldest family-run wine company still operating in the municipality of Anadia, in the 1930s, it passed the ban on the production of Porto wines outside Vila Nova de Gaia, to sell Bairrada table wines. At the end of the 50’s, one of the most famous wine brands in the Bairrada region – the “Frei João” – was born and, a little later, the “Porta dos Cavaleiros” brand from the Dão region. In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Aroma to dates, green tea, dried figs, a little peppermint, well integrated oak wood. Fruity palate, soft, elegant, soft tannins. Long test field.

Marquês de Borba Vinhas Velhas White

The grapes are cooled in a refrigerator before being vinified. The fermentation takes place in stainless steel tanks with temperature control. After 1/3 of the alcoholic fermentation, the wort is transferred to new and used barrels where the fermentation is completed. Staged for 8 months in French and Hungarian oak barrels. Crystalline-looking white wine. In the aroma there are citrus fruits, such as grapefruit and lemon, accompanied by a toast coming from the barrel but not overlying the fruit. Great freshness and minerality in the mouth, showing a slight fat from the stage on the lees. Contains Sulfites.

Harvest made at different times due to different stages of maturation. Bical harvested in the last week September and harvested Arinto 2nd week October. Fermentation and stage in used barrels of 400 liters during 8 months. Made with Arinto and Bical, to be very thin and elegant in aroma. With mineral notes touches of fresh herb and spices. Young, very classy, wide mouth, very fresh, high quality citrus fruit, discreet smoked, long and distinguished finish. Contains Sulfites.

Created from the harmony of the varieties Touriga Nacional, Alfrocheiro and Tinta-Roriz produced and vinified in Quinta do Soito. It has a grená color with violet reflections, delicate aroma and complete with blackberry and blueberry notes allied to menthol nuances and fine spices. In the mouth it reveals an excellent balance: the flavor is velvety and intense, great, with the presence of rich and silky tannins. With a complex and harmonious structure, it reveals a unique minerality combined with a long finish. Serve at 16 - 18 ºC.

Ontem Red

This wine that comes from the south of the Douro border, granite soils, mixes several white and red varieties. Hand-picked grapes for small boxes, perfectly matured. The bunches were placed whole in a stainless steel tank. The fermentation began within the grapes, and only then the masses were pressed and the fermentation finished. Most of the wine staged in the stainless steel tank, only 20% was staged for 10 months in used barrels. Aroma of forest fruits, silk tannins, lively acidity that surprises and brings a lot of freshness and vibration. Contains Sulfites.
