Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. A period of post-fermentation maceration is carried out to promote the extraction of tannins from the seeds — complementary to the tannins from the skins — in order to favor the structure and accentuate the aging potential. Wide aromatic expression: forest floor, bush, pine needles and discreet fennel notes, later giving way to black fruits (blackberry, blueberry), black plum and traces of licorice. In the mouth some chocolate, mushroom/truffle and hint of smoked, showing the good integration of the barrel. Monumental in the mouth, with several layers providing fascinating complexity. Refined tannins combine with good acidity (discreet, but present), enhancing the formidable structure. Eminently gastronomic wine with great potential for long aging.

This wine expresses the desire to make a Touriga Nacional from old vines. In a region where the old vineyard consists of a wide range of grape varieties mixed in the same plot. In 2009, 3,500 kg of Touriga Nacional were harvested from a single 80-year-old vineyard, which implied making a choice of Touriga Nacional grape varieties in the large set of grape varieties of that parcel. Vinification was done in a cement vat with pre- and post-fermentative maceration. Aging for 1 year in 225 liter French oak barrels. Opaque red color, aroma of red fruits with spicy notes. With grapes from the most typical Alentejo grape varieties produced in the sub-region of Borba, the label Cortiça wine was produced, a true ex-libris from the Adega de Borba. Coming from old vines, the grapes had a strict control in the evolution of the maturation, having been harvested in small quantities. In the Cellar, after the destemming and soft crushing of the grape, the alcoholic fermentation began, which lasted for about 10-15 days with the temperature controlled at 24ºC, for greater extraction of the aromas and fruity flavors of the grape. In order to increase the polyphenolic complexity, the tannins and the structure of the wine, it remained in the vat in a post-fermentative maceration process. The malolactic fermentation occurred later in stainless steel containers. To enhance and elevate its organoleptic characteristics, the wine aged 12 months in 3rd and 4th year barrels, French oak and exotic wood barrels. followed by a six-month bottling stage in the basement.
