The second fermentation occurs at the bottom of the large alqueva lake at 30m depth with constant temperature and total absence of light for 9 months. Longevity of 2 to 3 years. Elaborated from 4 breeds, celebrating the 4 generations Ervideira, it staged during 9 months in bottle, in the bottom of the biggest lake of Europe, the Alqueva. It is a Citrus Sparkling, releasing a fresh and fine aroma. In the mouth reveals a thin, persistent and very elegant bubble. Contains sulfites.

The grapes, harvested in 20 kg boxes, were gently crushed, without destemming, in a pneumatic press, and the must was immediately pumped into stainless steel fermentation vats, where the fermentation of the base wine took place. The wine was then bottled and placed in a cool cellar for the second fermentation according to the classic method, after aging in the bottle, the “dégorgement à la glace” is carried out. It has a lemon yellow color. It shows delicate notes of peach and apricot supported by a citrus freshness and a smooth brioche. Very fresh and crunchy, fruity and elegant, leaving a delicate peach flavor in the mouth. Contains sulfites.

The grapes are unloaded into the membrane press, where they are crushed and the must is extracted. The must is cooled, decanted and transferred to a stainless steel tank where it will undergo fermentation, with temperature control. After fermentation, the wine naturally settles in the tank, being cleaned at the end of the year, when it is prepared to carry out the bottling of sparkling wine, with free yeasts. The bottles of sparkling wine go to the cellar to carry out the fermentation in the bottle at a controlled temperature and in the absence of light. After fermentation, the bottles are kept in the cellar, where they are staged until regrinding and degorgement are carried out without the addition of sugar, at which point the product is ready for commercialization. Young, slightly golden in color, fruity with an elegant aroma, very fine and velvety bubble that melts in the mouth, with a present acidity that gives it a good presence in the mouth, in a creamy, fresh and balanced set.
