Fermentation is stopped with the addition of neutral spirit, allowing the wine to remain in skin maceration for 5 months. After maceration, the wine is bled and blended with the press wine, followed by aging that varies between 10 and 15 years in used oak barrels. Moscatel 70 Years from Adega Cooperativa de Favaios, created from the best seven harvests since its foundation, one per decade (1964, 1975, 1980, 1999, 2007, 2011 and 2020), is a hymn to the art of blending wines and also to the true muscat of the Douro. The Moscatel Galego variety, unlike the Moscatel de Setúbal, found in the freshness of the altitude (between 550 and 600 meters) and in the fertile soils of the Favaios-Alijó plateau the perfect place to express all its aromatic richness and acidic freshness. Unlike other fortified wines, the great Muscat wines, the most durable, are often born from grapes tending to be green rather than ripe. This Moscatel Roxo is the result of intense work distributed between the vineyard and the winery. The vineyard was accompanied and spoiled all the time so that the yields did not exceed 2500 liters / ha and the grapes arrived at the winery in the sanitary state and ideal maturation. In the Adega winemaking was idealized "own" for this product, different from what was customary in other companies in the region. It consists of an intense selection of bunches followed by a pre-fermentative maceration for 5 days, after which the fermentation is allowed to start very slowly homogeneously throughout the vat, reaching 3/4 of the fermentation in 3 days, benefiting this wine with the best wine spirits in this case Armagnac, followed by a post-fermentative maceration of 5 long months. The final stage is carried out in a 6,000 liter barrel where it is concentrated. Features a dark topaz color, intense aroma, floral, and spices. The 20 year old wire is made from the Moscatel grape variety, which is a type of grape that excels in its fruity character, melted with the aroma of tropical fruit, differentiating the muscat wines from any other type of wine. This wine is a batch of 19 harvests in which the youngest crop is at least 20 years old and the oldest one is about 80 years old, resulting in a complex, elegant, aromatic wine with a long end of trial. After receiving the grapes in the cellar, the probable grade of the grapes is analyzed so that the addition of brandy is carried out at the optimum time. Due to tradition, the skin contact is 5 months. In March, the masses are pressed, and the wine that results is filled with the tear wine. Tarnished on hardwood hulls. No bottle stage as it does not evolve after bottling. Contains sulfites.
