Harvested by hand at their optimum point, the grapes are destemmed, crushed and vinified according to a process based on careful maceration with extraction of color, tannins and aromas from the films, complemented by permanent reassembly during fermentation. This takes place in mills, at a controlled temperature between 28-30ºC, until reaching the desired Baumé degree. At this stage, the wine brandy (benefit) is added, giving rise to a fortified wine. High quality wine from a single harvest. It ages in wood for variable periods of time, never less than 7 years, and then bottled according to market requests. Bright ink color with golden halo. Rich and aromatic nose of dried figs, hazelnuts and walnuts harmoniously balanced by the presence of spices. In the mouth, intense flavors of dried fruits, soft and delicious, delimited by a fresh touch of confit orange. Good structure, beautiful balance and remarkable acidity. Nice and long-lasting finish. Fermentation in oil presses with skin maceration and pumping over at a temperature of 29ºC until reaching the desired Baumé, adding spirit in this phase. High quality wine from a single harvest. It ages in wood for variable periods of time, never less than 7 years, and then bottled according to market requests. Deep brown color, with greenish halo. Elegant and complex nose, dominated by suggestions of dried fruits, cocoa, a light touch of vinegar and wood. In the mouth it is silky, enveloping and slightly unctuous. Muscular and deep, with an extraordinary structure and a long and delicious finish. Contains sulfites.

Porto Cálem Vintage 2011 results from exceptional single-year harvests due to the high quality grapes obtained in ideal climatic conditions. After 2 years in oak barrels, Vintage Port wines are bottled in the cellars in Vila Nova de Gaia, on the banks of the Douro River. Vintage improves with age in the bottle for decades. It has an impressive purple color and reveals strong aromas of fruit (especially raspberries and blackberries), with firm tannins and a balanced structure. By aging, it becomes softer, but more elegant and complex, acquiring softer colors, distinct aromas and body. Contains sulfites.

A nice style where berries and red fruits dominate the palate, Final de boca is devoid of alcoholic connotations. Some of the grapes come from the vineyards of Quinta do Noval, the rest are vineyards classified in the heart of the Douro valley. Some of the grapes are crushed in traditional Quinta vats. Another is crushed mechanically in steel vats. This mechanical pressing process was designed specifically for Noval, geared to the needs of our technical team. Offley Boa Vista Vintage 2011 Ruby
After gentle crushing with partial destemming, a very intense maceration was followed during the period of alcoholic fermentation, with which it was intended to obtain the highest possible extraction of the quality constituents in the films. This maceration is obtained through the steps of traditional granite winches, with controlled temperature at about 28ºC. During this phase not only a strict control of the fermentation temperatures, but also of the density was chosen, thus choosing the ideal moment for the addition of the neutral wine spirit necessary for the stop of fermentation. Very intense, of an almost opaque dark red . Aromatically very rich, the black fruit like plum, the balsamic aromas of resin and cedar, and some floral notes of the "subois", as well as spices such as cloves and nutmeg, stand out on the nose. In the mouth it has an excellent volume, good acidity, lively but well integrated tannins, and notes of black fruit, in particular the plum again, but also cherry. Its end is long and intense. Dona Antónia Reserva Tawny
Ferreira Dona Antónia Reserva Tawny has a beautiful red color, with intense yellowish tones that resemble its slow maturation in wood. Its aroma is intense and rich, with notes of very ripe fruit (plum, apricot and marmalade) and floral notes. Complex, its spices and walnut notes derive from the evolution in oak wood through oxidation. In the mouth, it is a full-bodied and rich flavored wine, extremely well balanced, combining elegance with a delicate yet persistent finish. Contains sulfites.
