Manual vinification, pressing very slowly to respect the fruit. Aging in stainless steel for 7-8 months. Throughout the aging process, decisions are made only after careful evaluation of taste. The data obtained are supplemented by technical analysis. As with all other Joseph Drouhin wines, the absolute priority is given to the true expression of terroir and character of the vintage. A dry and lively wine, typical of Chablis. Bright yellow-green color with green reflections. In the nose, complex aromas and minerals resemble lemon and white flower along with vegetable notes such as asparagus or artichokes and marine notes. In the mouth, the first impression is clear and crisp, with a long finish, with fruity and mineral flavors, with a slight honey aroma when the wine is more evolved. Contains Sulfites.
100Hectares Tinta Amarela Red
Aging for 6 months in French oak barrels. Selection of grapes in the cut and transport in boxes directly to the cellar. Vinification with crushing and total destemming. Fermentation in an open press with controlled temperature. Intense red color and very balanced nose and well filled with notes of wild fruits and cherries, spices and a light floral touch, on a background where the elegance of vanilla and barrel notes is evident, in the mouth it reveals a voluminous and enveloping wine , where the fruit and the spices reveal a beautiful integration and the tannins demonstrate a good firmness, showing signs of potential in the bottle, a long and persistent finish. Ilha Blanc de Noirs White
Fermentation with strict temperature control in stainless steel tanks. Slight post-fermentation stage in contact with fine lees. Tartaric stabilization. This white from red grapes Tinta Negra is a fresh, unctuous, persistent and delicate wine. A unique wine with notes of citrus fruit and lychees. Contains sulfites.
Brut Dargent Ice Chardonnay White
Traditional method with fermentation at a very low temperature to preserve all the aromas. Aged for 9 months on the lees after a double fermentation in the bottle, Brut d'Argent Ice offers a wealth of distinctive flavors. A pale lemon demi sec sparkling wine with a green hue, a fruity and exotic nose, a fresh and elegant palate. Perfect as an aperitif and with desserts. Contains sulfites.
Arvad Rose
Manual harvest and direct press with whole bunch. Fermentation took place in stainless steel vats, followed by aging on fine lees for 8 months. Very light pink, notes of fresh red fruits and light floral. Very fresh reflecting the good acidity that it has, in an enveloping and smooth set. Contains sulfites.
Dom Martinho White
The grape varieties were vinified separately. After a very gentle pressing of the grapes, the must undergoes a cold static decanting and a 7-day “SURLIES” stage, fermentation takes place in stainless steel vats at controlled temperature, fermenting at low temperatures. The Wardrobe gives floral and citrus and Arinto brings acidity and freshness to the set. This wine is very expressive in the vanilla aromas, it has an evident and elegant freshness. The balanced acidity of this wine gives it a unique freshness and balance. Ideal for elaborate fish dishes due to its creaminess and freshness. Contains sulfites.
Catarina Red
50% of wine passes through Madeira de Carvalho francês, for a period of more than 6 months. Very deep, very rich and concentrated aromas. Notes of vermilion fruits combined with toasted nuances and baked berries are integrated on a firm and elegant structure. Complex and long, with aging potential. Count me sulfites.

Filipa Pato Nossa Missão Red
Missão, is a small centennial vineyard of 0.57 hectares with pre-phylloxeric vines of over 100 years. Production is limited to only 500 bottles and 30 magnums. It is located on a gentle slope with east orientation, the soil is of limestone origin from the Lower Jurassic era, with reddish clay. The cultivation and harvesting are totally manual and the sorting of the grapes is done in the vineyard itself. A part of the grapes are destemmed, and the percentage of whole grapes depends on the conditions of each harvest. Fermentation takes place slowly for about 3 weeks, with indigenous yeasts, the flow is smooth and long. After alcoholic fermentation, the wine drains by gravity and the masses are pressed. The whole fills only a traditional 500 liter kite where it stays for 18 months in our basement. The "Missão" is a remarkable wine for its pure expression of Berry. While young, the aromas resemble violet and strawberry. After 7-9 years, the aromas become more complex with a lot of energy and concentration. The tannins, although very alive, are soft, lively acidity, long finish, irreverent and elegant. It is a wine with long aging potential. Contains Sulfites.
