Made exclusively from the grapes of the Pinot Noir variety, on the property of Espiells. A manual harvest in its best maturity and a small transport of boxes, guarantees the integrity of the curls. Manual loading and gentle grape pressing without de-greasing is a magnificent juice with low color intensity. A controlled fermentation and static fermentation, they transform this must into a very personal base wine. Cava with a beautiful golden color, with faint reddish memories that evoke its noble varietal origin. Its very fine bubbles make it rise in beautiful and abundant rosaries. I have a beautiful and persistent crown. Its aroma is amazing. Notes of white fruits and bones, unusual aromas of cherries, surrounded by a background of honey, toast and citrus fruits. An elegant and complex aroma. In the mouth it offers an amazing and fruity structure. Excellent effervescence in the mouth, with great creaminess. Unctuous, fresh, intense and persistent, it invites us to enjoy a wealth of extraordinary sensations. Contains sulfites.
Quinta dos Murças Vintage 2011 Ruby
Selection of quality grapes letter A, followed by destemming and crushing. After fermentation in the winery by the traditional step-by-step process, wine spirits were added. Stage in stainless steel tank. Quinta dos Murças Vintage 2011 was dense, opaque color with violet tones. Aroma with suggestions of blue fruits and some floral notes of violets. Messias Vintage 2011 + 2 Copos Ruby
Fermented wine with partial destemming at a controlled temperature (24-28ºC) when the wort reaches the desired sweetness value, the fermentation is interrupted by the addition of aguardente (77%), later staggered in oak wood, in the warehouses in Vila Nova de Gaia until bottled, between the 2nd and 3rd year, after being approved. Deep red color, in the nose exalts the aromas of black fruit of the forest, with touches of violet and nuances of black pepper. On the palate there is an explosion of ripe fruit combined with a high freshness, with very good tannins that give it immense life and prolongation of the mouth, a characteristic that increases its potential for aging, although it can be consumed already. Total destemming, natural static defecation. 100% fermented in 2nd use barrels. Maturation for 36 months in French oak barrels of 2nd use.
Tasting notes: Intense citrus color. Predominant aroma in notes of complexity; dried fruits, toasted cereal, notes of bread making and nuances of fennel. Complex, fresh, unctuous flavor with long persistence.

The fermentation is stopped with the addition of neutral brandy maintaining the wine in skin maceration for 3 months. After this period it is made bleeding that is later mixed with the wine press. Porto Cálem Vintage 2011 results from exceptional single-year harvests due to the high quality grapes obtained in ideal climatic conditions. After 2 years in oak barrels, Vintage Port wines are bottled in the cellars in Vila Nova de Gaia, on the banks of the Douro River. Vintage improves with age in the bottle for decades. It has an impressive purple color and reveals strong aromas of fruit (especially raspberries and blackberries), with firm tannins and a balanced structure. By aging, it becomes softer, but more elegant and complex, acquiring softer colors, distinct aromas and body. Contains sulfites.
Offley Boa Vista Vintage 2011 Ruby
After gentle crushing with partial destemming, a very intense maceration was followed during the period of alcoholic fermentation, with which it was intended to obtain the highest possible extraction of the quality constituents in the films. This maceration is obtained through the steps of traditional granite winches, with controlled temperature at about 28ºC. During this phase not only a strict control of the fermentation temperatures, but also of the density was chosen, thus choosing the ideal moment for the addition of the neutral wine spirit necessary for the stop of fermentation. Very intense, of an almost opaque dark red . Aromatically very rich, the black fruit like plum, the balsamic aromas of resin and cedar, and some floral notes of the "subois", as well as spices such as cloves and nutmeg, stand out on the nose. In the mouth it has an excellent volume, good acidity, lively but well integrated tannins, and notes of black fruit, in particular the plum again, but also cherry. Its end is long and intense. Contains sulfites.
