It is a wine that evolves a lot, showing itself to be intense, elegant, with great complexity and structure. Long and persistent, with aging potential.
Casa do Cadaval Pinot Noir Red
The harvest is made in mid-August, with a total destemming of the grapes. Fermentation occurs in stainless steel vats, with controlled temperature, followed by a skin maceration for 1 week, without any mechanical extraction. The wine was aged for 6 months in used French oak barrels and 6 months in bottle.
