This sparkling wine remains in the cellar for 48 long months at a constant temperature of 12ºC. The Chardonnay shows refinement and freshness, the Arinto with exquisite acidity highlights the potential of the sandy-clay soil of Vinha das Andorinhas located in Pedreira de Vilarinho. To obtain the structure and preservation potential essential to this exceptional Elpídio Superior Sparkling Wine, only the juices from pressing the whole grape core are used, after separating the first and last extractions. The grapes are left to ferment for the first time, transforming the juice into base wine. Remaining in the tank allows the development of the complexity of the aromas and the structure of Elpídio Superior Sparkling Wine. The elegance and delicacy of the aroma suggest soft notes of white-fleshed fruits, reminiscent of pear and apple, with light citrus fruit and some toast. Grapes de-stemmed and fermented in a press with manual treading. Malolactic fermentation and prolonged aging for 20 months in new barrels (50%) using French oak. Wine stabilized naturally during aging in barrels. 3650 bottles were produced. Delicate aromas of ripe red fruit and light floral notes. Mediterranean bush, cedar, wood, mocha, spice and moss add aromatic complexity. In the mouth it proves to be an elegant wine, full of minerality and freshness, reflecting well the limestone soils from which it comes. José de Sousa Magnum Red
At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

This wine expresses the personality of the terroir od Dão wines being elaborated from the Alfrocheiro, Jaen, Tinta Roriz and Touriga Nacional varieties, produced and vinified at Quinta do Soito. Coming from the 28-55 year old Texture vineyards in Vila Nova de Tazem, in the Serra da Estrela sub-region, at an altitude of 480-550 m, on granitic soils. The tear must naturally fermented in new French oak (70%) and foudre (30%) barrels. Aged for 11 months “sur lie” without batonnage, followed by 10 months in stainless steel tanks. Naturally stabilized. It is a very elegant wine, with delicate citrus aromas, mainly lemon and lime, cedar, pepper and even a noticeable oak. Clear appearance. red color with hints of garnet, reveals notes of red fruit with hints of raspberry, light blueberry, complexed with nuances of cinnamon and cloves, flanked by fresh vanilla expressions. It presents a very elegant and balanced body, with velvety and round tannins, with good expression of balsamic and pine notes. An intense, elegant wine with volume. Beginning at the end of August, this harvest was the earliest ever harvested in Soalheiro, but it demonstrated an exceptional balance between the fruit and the acidity of the Alvarinhos of the unique terroir of Monção and Melgaço. Alvarinho grapes without late harvest were harvested in small capacity boxes and transported to the winery in a short period of time. The must obtained by pressing the whole grapes was decanted and fermented at low temperature. The fermentation took place in stainless steel until reaching the balance of sweetness and acidity intended and that dictated the final alcohol of this Soalheiro - 9%. Citrus and tropical notes of the Alvarinho variety with a balance of unusual acidity and sweetness. Contains Sulfites.

Grapes harvested by hand, for boxes of 25 kg, at their ideal point of maturation; intended to have a vigorous maturation, leading to higher aromatic and polyphenolic concentrations. After gentle crushing and total destemming, the grapes are fermented in stainless steel vats and wine presses, thus allowing the quality constituents present in the films of very ripe grapes to pass smoothly into the wine. After malolactic fermentation, the wine aged in used 300 liter French oak barrels for approximately 12 months. Purple and very deep color, very complex and distinct aromas where the fruity and floral character predominates, characteristic of the grape variety, with notes of spicy notes coming from the wood. In the mouth it shows fruit, complexity, great balance and harmony with high level tannins that give it a long finish. Contains Sulfites.
