From the Encruzado and Malvasia-Fina grapes, this white wine is born, citrus in color and full of freshness. It reveals floral and citrus notes, excellent to accompany starters, white meat dishes, fish, salads and desserts. Serve at a temperature of 10ºC. Contain sulfites.

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.

Wine of deep color, perfectly limpid, of fruity aroma of great elegance, remembering wild berries and the pine caruma, with notes of vanilla and chocolate conferred by the wood of oak. In the mouth it shows vigorous with the own astringency of the youth, foreshadowing a remarkable aging, thanks to the balance of alcohol, acidity, tannins and body. Contains Sulfites.

It was vinified with temperature control and prolonged maceration, subjected to prolonged stage without intervention of wood. It has a ruby color, complex and delicate aroma, with great typicality. In the mouth a smooth and velvety flavor with fine tannin. Contains Sulfites.

This wine is straw yellow in color, with a high intensity aroma, revealing the aromatic complexity that is due to the particular conditions of aging and to the characteristics of the Encruzado grape variety. On the nose, the superior integration of aromas from French oak stands out where it aged. In the mouth, the attack is intense, voluminous, revealing a lively but very integrated acidity. The ending is long and memorable. Contains sulfites.

It aged for 12 months in new French oak casks in order to enrich aromas. stabilize the color and round the tannins. It presents a very rich aroma, in which shades of ripe fruits, black plum and raspberry are combined, with floral aromas of violet, in a background of spices, menthol and typical aromas of Dão wines, such as resin, pine needles and pine. In the mouth, the excellent balance it presents between the tannins, the very cheerful acidity, the body and the alcohol, gives rise to a high level varietal wine. Contains sulfites.
