Produced with the varieties Arinto and Bical. It is a sparkling wine with a light yellow and citrus color, fine to medium bubble, very persistent. Nose citrus, little complex, with light pastry and sap. Sweet touch with good freshness and living finish. Excellent as an appetizer or to accompany seafood dishes, fish, grilled meats, various desserts. Store in a cool, dry place. Crushing with total destemming, soft pneumatic pressing, natural static clarification and alcoholic fermentation at 16 ° C. Sparkling by the classical method. Contains sulfites.

100% Touriga Nacional grape variety. A special parcel in our Quinta do Ribeiro Santo. Harvest by hand. Total destemming and decanting at low temperatures for 24h. The first fermentation happened in a stainless steel vat. An in-tank batonnage was followed for 3 months. The second fermentation followed the traditional method of fermentation in bottle, which was held in a cool cellar for 24 months. Light and refined salmon color. Delicate and engaging aromas of apricot, some tangerine and slight toast. Lovely harmony between acidity and structure. Fine bubble offering complexity and freshness. Creamy body with incredible depth. Will age beautifully in bottle. Contain sulfites.
Envelope Red
Envelope Red results from a blend with Touriga Nacional, Alfrocheiro, Tinta Roriz and Tinto Cão from vineyards aged 40, and fermented with 100% stalks. In the middle of the process, in order to avoid the astringency of the tannins, we interrupted the contact with the film. It aged for 12 months in 300 liter barrels and then remained in the bottle for another 8 months before leaving for the market. Clear and open in color. It shows a very fresh aroma, markedly mineral, with wild fruits, spices and notes of reduction. In the mouth it is fresh, with a well-marked acidity, very polished tannins and a long, deep and delicate finish. Contains Sulfites.
Envelope White
Made with grapes harvested from the old vines on the Ribeiro Santo property and on another plot, in São João de Lourosa, where the Dão runs, which calls the origin of this blend, made from the Encruzado variety. The must fermented under lees, then in 300L barrels and aged there, with battonage, for 6 months. After bottling, the wine was kept in the cellar for another 6 months. Clear and citrine color. Delicate aroma with notes of white fruit, aromatic herbs and a mineral profile. In the mouth tasting it shows complexity and freshness, with a refreshing minerality and citric acidity. Casa da Passarellla O Enólogo – Vinhas Velhas 3x Red
Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.
Elpenor White
A Blanc de Noir from Touriga Nacional, mineral and structured with firm acidity. It reveals the profile of the original grape variety. This wine has a bright citrus color with a slight straw nuance. The aroma is very elegant and refined, with notes of white pulp fruit combined with notes of violet and tea, with a soft note of lychees. In the mouth it shows volume and minerality, with a velvety and fresh structure, revealing a very long and high character finish.
Dona Sancha Vinha da Avarenta Clarete Red
Manual harvest in 20kg boxes, fermentation in stainless steel vats with skin contact until the 4th day. Controlled temperature between 18º-20ºC. Duration of 20 days. Aging for 6 months in stainless steel vats and 2 months in bottle. Blackcurrant color, expressive nose with notes of red fruit, raspberry, currant and strawberry jam. Fresh with very present acidity, fine tannins, with great gastronomic potential. Contains sulfites.

Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way - we do not subject this wine to any type of filtration. It was prepared using the classic open spout method, followed by cold decantation. Fermentation at a controlled temperature of 14ºC for 4 weeks. Natural stage in contact with fine lees for 7 months in stainless steel vat until bottling. Bright citrus color. Very exuberant fruity aroma, with notes of pulpy fruit (peach and apricot), as well as a light herbaceous aroma of dry straw, almost reminiscent of tea. On the palate it shows well its well-marked acidity, without being exaggerated and a pleasant volume. Very tropical (passion fruit and pineapple) and citrus, with notes also of dry straw and very mineral. Very persistent aftertaste. Contains sulfites.

Manual harvest in 15 kg boxes. Manual selection of grapes on a sorting mat. After destemming and crushing, the different varieties are vinified individually in stainless steel vats at a controlled temperature, with maceration being considered appropriate for their characteristics. After malolactic fermentation, part of the batch aged in French oak barrels for about 20 months, and the rest in stainless steel vats. its gently floral and fruity components, and its lush and dense structure in the mouth, refreshed by the fluidity and delicacy of Alfrocheiro. It aged for 12 months in new French oak casks in order to enrich aromas. stabilize the color and round the tannins. It presents a very rich aroma, in which shades of ripe fruits, black plum and raspberry are combined, with floral aromas of violet, in a background of spices, menthol and typical aromas of Dão wines, such as resin, pine needles and pine.
