Grafting is born from the heterogeneity of the concept, since every year is different in edaphoclimatic conditions. From this differentiation, a wine was created based on the best behavior of the grape variety in the wine year. In the case of Casa da Passarella Enxertia Jaen, fermentation took place in a cement vat with spontaneous fermentation. 12 months in barrel and 18 months in bottle. The entire stabilization process resulted from mininmalist and natural processes. It is an opaque red wine, spicy notes of black pepper with vegetables. It presents a great balance with easy tannins of great smoothness. Long aftertaste. Contains sulfites.

Casa da Passarella O Enólogo – Vinhas Velhas Red

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.

Casa da Passarella Enxertia Alfrocheiro Red

From Dão, Casa da Passarella Enxertia Alfrocheiro arises from the heterogeneity of our encepting. Every year they are different in the soil-climatic conditions. From this differentiation we decided to create a wine based on the best behavior of the grape variety in the wine year. Based on this philosophy, we feel free to choose the best reflected caste each year. We inaugurated this reference with the Alfrocheiro of the year 2011. The fermentation took place in a vat of spontaneous fermentation. Stage of 12 months in barrel and 18 months in bottle. The whole process of stabilization resulted from minimalist and natural processes. Contains Sulfites.

Casa da Passarella A Descoberta White

The mystery of the box found inside one of the walls of Casa da Passarella is finally solved. The story begins in 1942, when a box is hidden in one of the rooms of Casa da Passarella, containing a handwritten document with instructions to be opened 50 years later. The document also contained a last will: that all the values stored in the box should be distributed ny the poor. The truth is that neither of these things happened. Only in 2010, when the Gouse suffered works, the box was found and opened. And there was nothing inside. The investigations went forward, without ever having unraveled the mystery. When resignation seemed to overcome persistence, a specialist in the unusual was called to the scene: " the box was indeed replete," explained Professor K.Noronha, "but not tangible, material things, an extraordinary essence that, reacting with the times to come, would bring happiness through wine to all who made art and profit. "Now, these times are already part of the present, and this is a double discovery". From the Dão region, Casa da Passarella A Descoberta White Wine has a rosemary aroma, saved with citrus fruits. Coming from the Dão region, this wine is based on the traditional varieties Tinta Roriz, Alfrocheiro, Jaen and Touriga Nacional. The winemaking takes place in a winery, where we intend to express the added value of our terroir. In this sense, one of the measures we take are the fermentations that occur with the selected yeast in our vineyards, a tradition of the house that dates back several decades. The stage is made in traditional cement tanks, and a small percentage in used barrels. Contains Sulfites.

Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way - we do not subject this wine to any type of filtration. Contains Sulfites.

Villa Oliveira Touriga Nacional Red

This wine expresses the desire to make a Touriga Nacional from old vines. In a region where the old vineyard consists of a wide range of grape varieties mixed in the same plot. In 2009, 3,500 kg of Touriga Nacional were harvested from a single 80-year-old vineyard, which implied making a choice of Touriga Nacional grape varieties in the large set of grape varieties of that parcel. Vinification was done in a cement vat with pre- and post-fermentative maceration. Aging for 1 year in 225 liter French oak barrels. Opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant. Long aftertaste. Contains sulfites.

The "Premium" line of Quinta da Pellada wines has long been an icon of Dão wines. For Álvaro Castro, the viticulture and the characteristics of each year are that shape each harvest, however, dedication and alertness are essential so that nature can be "protected", in order to exercise the minimum of human intervention in the elaboration of each one of their wines. This field blend, which joins castes from Quinta da Pellada and Casa da Passarella, has been staging for 14 months in allier oak casks. Intense ruby color, very concentrated in the aroma, modern and vigorous style. In the mouth, compote and game notes in which the final toasted notes leave a pleasant memory. Tannins fine and of good quality, everything very well proportioned, giving it a great complexity. Contains Sulfites.
