After harvest, the grapes are collected in the cellar and sent to the cold rooms, where the temperature is controlled up to 10oC for 12 hours. The bunches are then stalked and the grapes broken. Partially fermented in frustoconical stainless steel tanks and French oak vats. After the alcoholic and malolactic fermentation, the stage partially runs for 7 months in French oak barrels of the Seguin Moreau brand (medium – fine grain), until bottling. The bottle stage occurs for at least 12 months. Contains Sulfites.

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden on foot and destemmed by hand on a table called "table of ripanço". Afterwards, a small part of the must, the films and the stench are fermented in the clay pots, and another in the wine press. The remainder of the brand is fermented in stainless steel vats. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months in French and American oak casks. Red color loaded with scented dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, tannins present but soft. Long end of test. Contains Sulfites.

Manual harvesting, reception with total destemming and crushing immediately, the grapes are fermented by grape varieties and batches, so that from a very early age a rigorous selection can be made that will later give rise to the “blend”, very traditional from the old world, reveals the art of selecting grapes by parcels and the art of selecting wines for blending. Fermentation takes place in small capacity stainless steel vats, with temperatures around 28 ºC. Smooth and controlled macerations in order to obtain elegant and aromatic wines. Part of the lot is aged for a period of 12 months in predominantly French oak, with a small percentage of American wood. Intense aroma of great complexity, aromas of forest fruits and cistus from Touriga Franca, spices and red fruits from Tinta Roriz and very fresh and elegant violet floral notes from Touriga Nacional. In the mouth it is sweet and enveloping, with very smooth noble tannins, long and warm finish. Contains Sulfites.
Quinta do Vallado Magnum Red

About 80% of the grapes come from vines planted in the 1990s and 20% from old vines aged between 60 and 100 years. The grapes were vinified in stainless steel vats of 5 and 10 tons of capacity, fully destemmed. The must fermented for about a week at 23º - 25º C, with programmed automatic pumping over. About 90% of the wine was aged for 8 months in stainless steel vats and the remainder in 3rd and 4th year French oak barrels of 225 lt. Concentrated aroma, highlighting the ripe red fruits, rock rose and violet. Good structure, fleshy with round tannins. Persistent ending. Contains sulfites.
