The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

The wine was vinified in conical stem vats equipped with temperature control (25-28 ºC). Aging for 14 months in French oak barrels of 225 liters. Beautiful color with a vibrant, elegant and fresh fruit aroma with notes of wild berries and currant. Well cut and polished in the mouth, has a nice structure with a good volume of mouth some notes of very well integrated wood. It is an enveloping wine, but at the same time with a freshness and purity of fruit of note, which give it a charm of its own. It is ready to be consumed but has a good potential for bottle aging. Total destemming and pressing. Selection of grape must and post cooling and decantation at low temperature. Fermentation in stainless steel vats with temperature and around 15ºC for 20 days. About 15% of the wine ferment and age for 6 months in a 500L French oak barrel. The barrel aging allowed this wine to stand out from all its most mineral characteristics. Floral in aroma, but in harmony with the barrel, this wine is very complete, with a remarkable volume and structure from the first taste. The citrus notes and the minerality, give freshness to the wine, keeping the aftertaste vibrant and long. Contains sulfites.

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.

Quinta do Crasto Touriga Franca Red

The grapes, from the best plots of Touriga Franca at Quinta do Crasto, were transported in boxes of 22 kg capacity and subjected to rigorous sorting at the entrance to the cellar. After a complete destemming and a slight crushing, the must was transferred to fermentation vats in stainless steel with controlled temperature. At the end of the alcoholic fermentation, a soft pressing was carried out. Quinta do Crasto Touriga Franca 2016 aged in French oak barrels where it remained for 18 months. It has a deep violet color. On the nose, it impresses with its intensity and concentration of red fruit aromas in perfect harmony with soft floral notes. In the mouth tasting it presents an intense start, evolving into an elegant profile wine, with excellent volume of mouth and silky texture tannins, all very well integrated with notes of red fruits. It ends in perfect balance, with an extraordinary persistence and full of freshness. A wine that perfectly reflects the identity of the variety. Contains sulfites.
