The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

Grapes from 23-year-old vines, hand-picked into 20kg boxes. Second selection of grapes at the sorting table. Crushing with total destemming and pellicular maceration. The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Followed by selection on a mat of choice, 30% were introduced into the vat with crushing and 70% in whole bunches, which allowed the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation totally in stainless steel vats, having completed the malolactic fermentation in stainless steel. It was then aged for 75% in used 4-year-old barrels of 400L and 225L of French oak, where it remained for 12 months, with the remaining part of the batch aged in stainless steel vats. of wild fruits, in a typical Douro region with a fine cut, slightly spicy and fresh. In the mouth it is seductive, with rusticity conferred by the stems of the grapes, combined with a good minerality. Long, thin and vibrant profile. Contains sulfites.

Manual harvest in 15 kg boxes. Manual selection of grapes on a sorting mat. After destemming and crushing, the different varieties are vinified individually in stainless steel vats at a controlled temperature, with maceration being considered appropriate for their characteristics. After malolactic fermentation, part of the batch aged in French oak barrels for about 20 months, and the rest in stainless steel vats. its gently floral and fruity components, and its lush and dense structure in the mouth, refreshed by the fluidity and delicacy of Alfrocheiro.
