The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to a pneumatic press. After clarifying the must, alcoholic fermentation began in stainless steel tanks at low temperatures of around 14ºC, in order to preserve all the varietal character of each variety. Alcoholic fermentation took place for approximately 15 days, where after resting, the different components aged for 8 months in stainless steel. It is a wine with a citrine color and medium intensity. In the aroma, it presents notes of fresh fruit with a predominance of citrus fruit, white stone fruit and light tropical. In the mouth, it is intense with natural freshness balancing the whole.

Manual Vindima in boxes of 15 Kg. The grapes are disengaged and fermented in marble lagares with a traditional tread. Transfer to stainless steel vat following a long post-fermentation maceration. Stayed for 9 months in American and French carvalho pipes. Cor intense pomegranate. Aroma that suggests black, very ripe fruits married with spices from the barrel. Elegant and full-bodied, with soft tannins that are still present. Um vinho carnudo, powerful and cheio. Contains sulfites.

Coming from vineyards under 20 years old, the reds are made in open ponds with footsteps (like all reds in Mouchão) and with 100% stems. It presents an intense red - garnet color, concentrated aroma of black fruits and spices, with delicate floral touch, structured and rich palate with fruit, acidity and tannins in perfect balance. The aroma is very delicate with good presence of notes of black plum, bergamot and violet, combined with shades of fine vanilla, cocoa and spices.
