The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden on foot and destemmed by hand on a table called "table of ripanço". Afterwards, a small part of the must, the films and the stench are fermented in the clay pots, and another in the wine press. The remainder of the brand is fermented in stainless steel vats. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months in French and American oak casks. Red color loaded with scented dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, tannins present but soft. Long end of test. Contains Sulfites.

The Soalheiro Mineral Rose can be enjoyed as an excellent and relaxed aperitif, very adapted to the current tendency to consume wine by the glass, but also proves perfect to harmonize with lighter dishes such as salads, fish or seafood. One of the great concerns of the Soalheiro is to produce "wines to drink with pleasure", believing in the quality and tendency to appreciate wines with a more moderate alcohol. This Soalheiro Mineral Rose manages to have persistence due to Pinot Noir and elegance due to Alvarinho with moderate alcohol of 12%. To Alvarinho produced in high altitude vineyards where the caste has a more intense, fresh and mineral dimension, the Soalheiro has joined the Pinot Noir variety, also produced in the region and which presents a more aromatic and elegant dimension. In this way, a wine emerges at the same time aromatic and fresh, with a mineral end of mouth, and at the same time very greedy. Contains Sulfites.
